POS - Multiple Collection Purchases

Allow a POS interface that will allow us to select items from more than one collection. We have a registration day for our families to take care of most memberships/spirit wear/subscriptions at once, but I have different managers for each type. If I create one collection for the registration day, my manager has to maintain two lists for our flag subscription, possible resulting in missed addresses for placing our flags. But if I have them all separate, I have to take multiple payments slowing down our checkout.

I feel this applies to checkout on collections as well. If I have users going to our site and they want to purchase from multiple collections at one time right now it seems like they are unable to. You have to checkout on each collection individually even though you can add multiple collections to your cart.
